Marinated Strawberry Pizza
It’s as if strawberry salad was fused with pizza. Topped with fresh spinach, crispy bacon, and strawberries marinated in balsamic vinegar, this pizza is perfect for a summer time barbecue.
Ingredients
- 2 rounds of fresh pizza dough
- 2 pt fresh strawberries
- 3 tbsp balsamic vinegar
- 1 tbsp brown sugar
- of freshly ground black pepper
- 10 oz fresh spinach, rinsed and coarsely chopped
- 2 cups ricotta cheese
- 6 pieces of bacon, cooked and crumbled
- Extra virgin olive oil
- Fresh basil for garnish
- Sea salt to taste
Directions
For the Strawberries:
- Place the strawberries in a bowl. Drizzle the balsamic vinegar over the strawberries and sprinkle with sugar and black pepper. Stir gently to combine.
- Cover and let sit at room temperature for at least 30 minutes to an hour. Place them in the refrigerator if using the next day.
For the Pizza:
- Heat your oven to 500 °F. If using a pizza stone, allow the stone to heat in the oven for 30 minutes before baking on it.
- Stretch out one of the pizza dough rounds onto a pizza peel dusted with flour, or onto a cookie sheet (if not using a pizza stone).
- Spread the freshly made ricotta cheese on top of the dough.
- Add a handlful of the chopped spinach and about 3/4 cup of the marinated strawberries
- Drizzle with a little extra virgin olive oil and sprinkle with sea salt.
- Slide the pizza into the oven and bake for about 8-10 minutes, until the crust is golden brown and the cheese is bubbling.
- Remove from the oven and garnish with the cooked bacon crumbled and fresh basil.
