Pear & Gorgonzola Pizza

Crisp sweet apples pair perfectly with savory sausage and cheddar cheese for this incredibly satisfying and easy pizza.
Ingredients
- 4 links of pork sausage, removed from casings
- 8 oz white cheddar cheese, shredded
- 1 apple, cut into matchsticks
- 1 Tbsp extra virgin olive oil
- salt and pepper to taste
- fresh thyme
- 2 rounds of pizza dough
Instructions
- Heat your oven to 500°F. If you’re using a pizza stone, allow the stone to heat up in the oven for 30 minutes before baking on it.
- While the oven is heating, cook the sausage. Heat 2 Tbsp olive oil in a medium skillet over medium heat. Remove the sausage from the casings and add to the pan. Sauté until cooked through, breaking up the sausage as it cooks with a wooden spoon or heat resistant spatula so that you have very small pieces.
- Stretch out your dough onto a pizza peel dusted with flour. If you don’t have a peel and stone, use a baking sheet lined with parchment paper. Oil the parchment with a little olive oil so your pizza doesn’t stick.
- Sprinkle a thin layer of cheddar cheese on top of the stretched out dough.
- Distribute the sausage and apple slices over the top of the cheese.
- Season with salt and pepper and drizzle with 1 tbsp olive oil.
- Slide your pizza into the oven and bake for 8-10 minutes, until the crust is golden brown.
- Remove from the oven and garnish with fresh thyme.
